Oyster Mushroom Soup 

  • Oyster mushrooms, cleaned with a cloth and sliced

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 1 tablespoon grated ginger

  • 4 cups vegetable broth

  • 1 can coconut milk

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • Salt and pepper to taste

  • Fresh cilantro or parsley for garnish

  1. In a large pot, sauté the onion, garlic, and ginger in a tablespoon of oil until the onion is translucent.

  2. Add the oyster mushrooms to the pot and cook until they start to release their moisture and become tender, about 5-7 minutes.

  3. Add the vegetable broth, coconut milk, soy sauce, and rice vinegar to the pot and bring to a boil.

  4. Reduce the heat and let the soup simmer for 15-20 minutes.

  5. Season the soup with salt and pepper to taste.

  6. Garnish with fresh cilantro or parsley and serve hot.
