Oyster Mushroom Soup
Ingredients

Oyster mushrooms, cleaned with a cloth and sliced

1 onion, chopped

3 cloves garlic, minced

1 tablespoon grated ginger
-
4 cups vegetable broth
-
1 can coconut milk
-
2 tablespoons soy sauce
-
1 tablespoon rice vinegar
-
Salt and pepper to taste

Fresh cilantro or parsley for garnish
Instructions

In a large pot, sauté the onion, garlic, and ginger in a tablespoon of oil until the onion is translucent.

Add the oyster mushrooms to the pot and cook until they start to release their moisture and become tender, about 5-7 minutes.

Add the vegetable broth, coconut milk, soy sauce, and rice vinegar to the pot and bring to a boil.

Reduce the heat and let the soup simmer for 15-20 minutes.

Season the soup with salt and pepper to taste.

Garnish with fresh cilantro or parsley and serve hot.
